I'm craving chicken pot pie

(I've been craving it for nearly a month)

We'll be having it for dinner this coming Wednesday - I can't wait!

And why should I have to wait? Because this casserole must remain in my freezer until March is over. I signed up with the compassionate service arm of the Relief Society in my ward to have a casserole ready to go should anyone need a meal this month. Every month 5 sisters sign up to have a meal prepared in their freezer, available for a last minute compassionate service dinner. If you aren't called up on to share your casserole, then your own family eats it the next month.

So I guess I shouldn't count my chicken pot pie before it's baked. There are five more days left in March.

That is such a great idea to have people ready each month. It is hard to receive a phone call at 3pm for dinner that night. Gotta be creative....

of course if you eat it, you'll need it. I have a great recipe that adds sweet potatoes to it. Yum.

I hear costco sells good ones. will that do??

Maybe next time you sign up you should make two of whatever you're making so you can have one as well. This sounds like a good plan for compassionate service.

Our ward does that strategy too.

I love the convenience of having dinner ready and just having to pop it in the oven. I'm sure I'll be freezing meals like a mad woman in August.

Nichole pointed out that I will be making 4 cakes in the first 2 weeks of September: Carter's birthday, Aimee's half birthday, the school bus cake, and then one for baby X. Yikes.

Yummers! I love chicken pot pie and anything I've made ahead that's ready to pop into the oven. I'm sure it will only taste that much better now that you've had to wait a whole month to eat it! Enjoy!

That is such a great idea. I love it. Sometimes if I make something for my family that freezes well I'll keep an extra in my freezer for just that purpose.

After waiting a whole month to eat it..I hope it's as good as the anticipation!

Thanks for posting this, I made it for dinner because it sounded so good. The kids scarfed it. I hope you get to eat it in 5 days and that you still have the craving.
