Birthday Cake

Every year either Christy or Sue treat me with my favorite birthday cake:

Gingerbread Cake with Lemon Sauce and Whipped Cream

The Cake:

Cream together:
1/2 cup white sugar
1/2 cup butter
1 cup molasses

Add:
1 egg

Sift together, then add to wet ingredients:
2 1/2 cups sifted flour
1 1/2 tsp baking soda
1 tsp ginger
1/2 tsp cloves
1/2 tsp salt

Lastly mix in:
1 cup hot water

Bake in a 9x13 pan at 350' for 35 minutes.

The Lemon Sauce:

Sift together:
1 cup sugar
2 Tbsp cornstarch

Add to a pan of:
2 cups boiling water

Boil till thick, then remove from heat and stir in:
4 Tbsp butter
2 tsp vanilla
3 Tbsp lemon juice

The Whipped Cream:

oh c'mon you already know this one

The only picture I could trouble myself to take:

Sorry about that.

  1. It is also good with a gingerbread cake mix and lemon pie filling mix. I am just crazy about the ginger/lemon flavor combination!

  4. Happy Day After Your Birthday Barb. Dang, I'm sorry I missed it. Real sorry. Does it count I thought of you? No, I didn't think so, because I didn't think about it being your birthday when I thought of you yesterday.

    Happy, Happy Belated Day Anyway.

    Love,
    Jane

  8. Oh. My. Gosh. I don't know if I love any cake more than a cake with lemon sauce. Heavenly! I usually put it on a yellow or angel food cake, though. I also love spice cake with caramel frosting. So now I'm thinking...spice cake and lemon? Could I? Should I?

Oh, you're evil for even putting the thought in my head. Thanks a lot. I'm drooling.

That's a new one for me--haven't had those flavors together. It sounds so much like fall&winter rolled into one.

  13. I have never heard of this cake. It sounds wonderful though. Thanks for passing on the recipe.

Your China really does look like mine. When you mentioned that a while ago, I couldn't picture yours at all. Great minds, right?

  14. I might have to try this (after our November cake season is over). I just can't quite imagine how this would taste, and honestly, it doesn't sound good to me. But, I trust your food recommendations implicitly, so now I'll have to give it a shot. And heaven knows, I have the lemons necessary for the sauce.
